Grape juice – what is it?

Not being subjected to a fermentation process like wine, it has no alcohol and preserves all the organoleptic characteristics and beneficial properties of the grape.

Taken alone, natural, or incorporated in other recipes, it becomes a very precious ingredient of natural cooking because it is rich in mineral salts, including potassium, manganese, copper, phosphorus, magnesium, silicon, and iron.

Grape juice: benefits

Thanks to the high concentration of resveratrol, anthocyanins, and flavonoids, grape juice is a powerful natural antioxidant that stimulates liver function, counteracts cellular oxidation promoted by free radicals, and acts in the body as an anti-inflammatory. In addition, it helps to maintain the right level of cholesterol in the blood and to cleanse the liver of toxins and other waste substances.

Drinking it regularly between meals means helping natural drainage and fighting water retention while improving the tone of muscles and skin. Its intake also helps to reactivate the basal metabolism, contributing to the control of body weight and extinguishing the sense of hunger.

The benefits of this juice are also notable for the intestine as it helps fight irritable bowel syndrome and reactivate intestinal function and bacterial flora.

For athletes, grape juice is a fresh and energizing drink, especially when enhanced with a teaspoon of honey. It is ideal during or at the end of a heavy workout or to support the psyche in periods of greatest psycho-physical stress. Besides the ‘ anti-inflammatory action, this drink also promotes an important function in the organism’s immune-supporting natural defenses and prevents the onset of many forms of cancer.

Black grape juice

Berries of black, well-ripened grapes are considered the best for making grape juice. In fact, it seems that this variety is the richest in flavonoids, polyphenols, tannins, proanthocyanidins, and resveratrol.

In particular, the quantity of flavonoids contained in black grapes is 20 times higher than that present in the berries of white grapes.

White grape juice

The white grape juice, however, is no exception. Although less noble in properties and nutritional characteristics, white grapes are the best for hypertensive people because they contain a higher concentration of potassium and are particularly low in sodium.

This means that it aids in diuresis and supports treatments for kidney disease.

How to make grape juice

Grape juice is very easy to find a product: you can buy it ready to use or, alternatively, prepare it directly at home, starting from the extraction, pressing, and cooking of black or white grapes or strawberry grapes.

Here are the ingredients :

  • 1 kg of grapes;
  • 600-700 ml of water;
  • the juice of 1 lemon;
  • sugar to taste;
  • cloves, juniper berries, cinnamon (optional).


Put the washed grapes, the juice of 1 lemon, and the water in a saucepan. Cover with the lid and cook over medium heat, taking care to mix the ingredients often with a wooden spoon. The cooking time must be sufficient to reduce the volume of liquids by 70% and to obtain a thick mixture.

Allow to cool to room temperature and with the help of a vegetable mill or mixer, mash the cooked berries to extract the juice.

Filter the liquid thus obtained with a clean cloth and smooth in sweetness according to your personal taste. For storage, use previously sterilized glass containers with hermetic caps and proceed to transfer the juice a bit as you do for jams.

Store in the refrigerator or at room temperature. The unfiltered grape syrup is ideal for preparing jams, liqueurs, sweets, and as a natural thickener for various recipes.

Another way to get good fresh grape juice directly at home is the ‘ cold extractor. Like other fruits, in fact, even grapes can be centrifuged with this tool in order to extract the juice. In all cases, the ideal is to make sure you use organic grapes, free of pesticides or other chemicals that can deposit on the skin.

The procedure is very simple: the grapes are carefully washed under running cold water and inserted into the cold juice extractor at the lowest speed (820 revolutions per minute). This will allow the preservation of all the beneficial properties of the juice for up to 48 hours after squeezing.

Concentrated grape juice

Many people think that grape juice and concentrated grape juice are essentially the same things. In reality, the latter is a natural sweetener, an excellent substitute for sugar, which is obtained through a gradation process at 60-70 Brix and a concentration of the juice at low temperatures in a vacuum.

Grape juice without sugar

Given the high quantity of sugars, the consumption of this juice is not recommended for those suffering from diabetes, ulcerative gastritis, colitis, and those who follow a very strict low-calorie diet for the control or reduction of body weight. For all others, the rule of moderation applies: those who lead a sedentary lifestyle should not exceed one glass a day. For all others, the maximum limit is two glasses.

Frozen grape juice

While exposure to heat sources irremediably alters the properties of grape juice, freezing has pros and cons. If obtained by cold pressing or extraction and frozen immediately, the juice can retain many of its beneficial virtues.

The vitamins are not affected by almost anything of the freezing process, as well as anthocyanins, even after several months. However, other antioxidants are completely destroyed, as is beta-carotene. Better, therefore, to drink it in purity and fresh just made!

Pure and organic grape juice

The purity of grape juice essentially depends on the quality of the grapes used and the degree of ripeness. The berries, in fact, should come from 100% organic crops and be picked at the moment of perfect ripeness when they are able to best express their properties and organoleptic characteristics.

Furthermore, many nutritionists identify the real and authentic, pure grape juice in cold-prepared juice. There are many grape juices on the market, but the important thing, in order for them to be pure, is that they are not diluted with water.

Unfermented grape juice

If the wine is obtained from the alcoholic fermentation of musts, this process does not occur in grape juice. In fact, it is obtained by simply pressing the bunches. The must is then decanted, clarified, and pasteurized. It does not contain alcohol, which makes it suitable for consumption at any time of the day and also perfect for children.

Recipes with grape juice

If you want to experiment with new recipes, in addition to consumption in purity, grape juice is also well suited to other gastronomic uses. For example, you could use it to prepare drinks and soft drinks or to make Sapa, a traditional condiment that is prepared with:

  • Black grape juice
  • one lemon
  • cloves
  • cinnamon

Everything is boiled until the liquid is reduced to 20% of the initial volume. The only precaution is to stir continuously to prevent it from burning or sticking to the bottom of the pot during cooking. The mixture can be preserved like grape jam and used to enhance the flavor of ice cream, yogurt, milkshakes, and also some aged cheeses.
